For a while I have been wanting to try vegan eggnog and I finally found the recipe it even looks good. I might even try and make this on Christmas Eve wish me luck ! and if you really want to get all festive add some Brandy on that or Rum is that bad ? LoL
Here is the list of all the ingredients you will need :
3 cups coconut milk beverage, chilled
1 1/2 cans coconut cream
1/2 cup maple syrup
1 teaspoon vanilla
1/4 teaspoon salt
1 1/2 teaspoons freshly grated nutmeg
1 cinnamon stick
1 star anise
1) Add all ingredients to a blender and blend on high for 1 minute. (Alternative: whisk all ingredients together.) Chill for at least 2 hours.
2) Pour into glasses and top with freshly grated nutmeg, cinnamon, and star anise.
Cook Time: 10 minutes
